Vegetarian Cooking

United States of America. The seminar Nutrition 2000 conducted
by Andrews University in Michigan was a major
incentive to producing this book. Emily is a self-taught nutritionist
with a diploma in fitness and nutrition from Professional Career Development
Institute, Georgia, USA. She hold a Bachelor of Science degree from
the University of Tennessee, Knoxville. She has a conviction that a
healthy lifestyle can best be achieved through a non-meat diet which makes

- Pinto Bean Patties
- 1 lb. pinto beans-boiled
- 3 tsp. thyme leaves
- 1 cup seasoned stuffing
- 1/4 cup Wesson oil
- 1 large onion processed
- 1 cup walnut, processed
- 1 large sweet pepper,
processed
- 1 cup water from beans
- 3 heaping dessert spoon fulls
flour

- * When baking, and Wesson oil 1/4 cup.
- * When frying, fry with
margarine

Process pinto beans, after they are boiled and left to stand for 1
hour. Add seasoned stuffing, water from beans, onions, sweet pepper,
thyme, processed nuts. Mix well. Then add flour or egg
to bind batter together. Shape in large size mayonnaise jar cover. Remove
from cover and place in well greased pan. Bake at 300 degree F until dread.
serve with brown gravy.
